These oven-dried keto tomatoes are full of flavor and can be used in a lot of different keto dishes. Slowly drying the tomatoes brings out their sweetness, making a tasty and healthy low-carb treat.
Ingredients:
- 10 plum tomatoes, sliced in half lengthwise
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
Instructions:
Preheat your oven to 200F 95C
Place the halved tomatoes on a baking sheet lined with parchment paper, cut side up
Drizzle the olive oil over the tomatoes and sprinkle with salt, pepper, minced garlic, dried oregano, and dried thyme
Bake in the preheated oven for 4-6 hours, or until the tomatoes are dried but still slightly pliable
Remove from the oven and let cool before serving or storing
Enjoy as a snack or add to salads, keto pizzas, or antipasto platters
