A quick and flavorful Instant Pot Lemon Chicken recipe with a burst of citrusy goodness. Perfect for a busy weeknight dinner.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 lemon, sliced
- 2 tablespoons chopped fresh parsley for garnish
Instructions:
Season chicken breasts with salt, pepper, oregano, thyme, and paprika
Press Saute on the Instant Pot, add olive oil, and brown chicken on both sides
Add minced garlic and saute for 1 minute
Pour in chicken broth and lemon juice, scraping the bottom to deglaze
Place lemon slices on top of the chicken
Close the Instant Pot lid, set to Sealing, and pressure cook on high for 8 minutes
Once done, do a quick pressure release and open the lid
Garnish with chopped parsley and serve over rice or your favorite side
