Ingredients:
- 2 cups rolled oats
- 1 cup dates, pitted
- 1/2 cup raisins
- 1/4 cup almond butter
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup cashews, soaked
- 2 tablespoons coconut cream
- 1 tablespoon maple syrup
- 1/2 teaspoon vanilla extract
Instructions:
In a food processor, blend rolled oats until fine
Add pitted dates, almond butter, maple syrup, vanilla extract, and salt
Pulse until the mixture sticks together
Transfer the mixture to a bowl, then fold in raisins
Take small portions and shape into cookies
Place them on a lined baking sheet and freeze for 30 minutes
Meanwhile, prepare the vanilla cashew buttercream by blending soaked cashews, coconut cream, maple syrup, and vanilla extract until smooth
Once the cookies are firm, sandwich them together with a dollop of vanilla cashew buttercream
Enjoy immediately or store in the refrigerator for up to one week
