Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups whole milk
- 2 tablespoons unsalted butter, melted
- 1/4 teaspoon salt
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- Additional butter for cooking
Instructions:
In a blender, combine flour, eggs, milk, melted butter, salt, sugar, and vanilla extract
Blend until the batter is smooth, about 10-15 seconds
Refrigerate the batter for at least 30 minutes, or up to 2 hours
Heat a non-stick skillet or crepe pan over medium-high heat and add a small amount of butter to coat the bottom of the pan
Pour 1/4 cup of batter into the center of the hot pan and immediately tilt the pan to spread the batter thinly, covering the bottom of the pan
Cook for about 1-2 minutes, until the edges of the crepe start to lift and the bottom is golden brown
Flip the crepe using a spatula and cook for an additional 1-2 minutes on the other side until golden brown
Transfer the cooked crepe to a plate and keep warm
Repeat with the remaining batter, adding a small amount of butter to the pan before each crepe
Serve the crepes warm with your choice of toppings, such as Nutella, strawberries, whipped cream, or powdered sugar
