Italian Easter Cookies - Piricchittus Recipe

Piricchittus are traditional Italian Easter cookies with a delicate texture and sweet flavor. These cookies are popular during the Easter holiday and are a tasty treat for both children and adults.

Ingredients:

  • 4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Zest of 1 lemon
  • Pinch of salt
  • Colored sprinkles, for decorating

Instructions:

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy

Add the eggs one at a time, mixing well after each addition

Stir in the vanilla extract and lemon zest

In a separate bowl, whisk together the flour, baking powder, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms

If the dough is too sticky, add a little more flour

Turn the dough out onto a floured surface and knead it gently for a minute or two

Divide the dough into small portions and roll each portion into a rope about 1/2 inch in diameter

Cut the rope into small pieces, about 1/2 inch long

Preheat the oven to 350F 175C

Place the cut cookie pieces on a baking sheet lined with parchment paper

If desired, press each piece with a fork to create a decorative pattern

Bake in the preheated oven for about 12-15 minutes or until the cookies are lightly golden around the edges

Remove the cookies from the oven and let them cool completely on a wire rack

Once the cookies are cooled, decorate them with colored sprinkles
