Ingredients:
- 1 cup vegan butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup vegan cream cheese
- 1/4 cup powdered sugar
- 2 tsp ground cinnamon
Instructions:
Melt the vegan butter in a saucepan over medium-low heat until it turns golden brown and smells nutty
Remove from heat and let it cool
Mix the granulated sugar, brown sugar, and cooled browned butter together in a bowl until the mixture is smooth
Add the vanilla extract and mix it in well
Mix the flour, baking powder, and salt together in a different bowl
Mix the dry ingredients in slowly while stirring the wet ingredients together until a dough forms
Put the dough in the fridge for 30 minutes while its wrapped in plastic wrap
Warm the oven up to 175F 350C
Put parchment paper on the bottom of a baking sheet
Put the vegan cream cheese, powdered sugar, and ground cinnamon in a small bowl and mix them together until they are well mixed
Its best to roll the dough out so that its about 1/4 inch thick
Cover the dough with the cream cheese mixture
Start from the long edge and carefully roll the dough into a log
Cut the log into rounds that are 1/2 inch thick, and then put them on the baking sheet that has been prepared
Put it in the oven for 12 to 15 minutes, or until the edges turn golden brown
For five minutes, let it cool on the baking sheet
Then, move it to a wire rack to cool completely
